Is that a zucchini in your pocket?

The zucchinis in my container garden are apparently on steroids.  I pulled a couple monsters out of there and couldn't resist snapping a couple pics to show off.  
The squash isn't too shabby, either.  These guys were sooo tasty in a stir fry that same night!  And then the next week I pulled this one off the plant:
It is just as big, and we still haven't eaten it.  What should I make?  I'm thinking some veggie lasagna is in our future, if I can get a spare hour to cook something.  By the time I'm done with work, errands, exercise, picking up the house, or whatever I need to do, it's already 7pm.  I never feel like cooking anything that late.  I don't know how you ladies with kids do it!

  1. I thought for sure the first line of this article was going to say something like, "...Or are you just happy to see me?" But you resisted.

    Those veggies are HUGE. I have to say that zucchini and squash are two veggies that I'm not all that fond of... but I can enjoy them in some type of lasagna or (to kill all healthy side effects) cooked in some olive oil and salt.

    And as for cooking late, even though I'm no lady - I hear you. Once you get through the daily chores its hard to make anything really worth eating. We frequently resort to "breakfast for dinner" - pancakes, eggs, or something equally simple and inexpensive.

  3. Wow! I just bought both zucchini and squash at the Farmer's Market on Saturday, but they were not that massive. I really need to start growing my own veggies!

  4. I agree! I get home at 7:30 from work and I am just to tired to cook something wonderful. And I am quite jealous of those huge veggies. They look so tastey.

  5. Zucchini bread is a must. You can grate the zucchini and freeze it till you have time to make it. Then send some to me please!

    However, it came out REALLY salty. Cut the garlic salt in half, toast the bread, and use more zucchini than it calls for.

    Other than that it wasn't too bad! Not exactly health food...

  13. Zucchinis are my FAVE veggies. As soon as we start a garden, I'm definitely going to try to grow these. Suggestion for dinner: cut them in half, spoon out the middle, mix & heat the middle stuff in a pot with corn, parm cheese and/or montery(?) jack cheese, onions, and whatever else you like and then pile them up back on the zucchini "boats" and bake at 350 until they look ready. Easy, fast, delicious!
